Brunch is a great way to start theweekend.Itsusuallyserved between 9 AM to 2 PM but we can eat this all day long. For this delicious brunch we used a good quality loaf of bread Dubliner cheese Prosciutto home made nut butter and bananas. Banana nut butter toast Ingredients 1 slice of good quality bread toasted 1 banana Nut butter we used cashew almond nut butter Cinnamon Directions Toast the slice of bread. Spread the nut butter slice banana and put it on top of the toasted bread. Sprinkle cinnamon to finish. Egg Prosciutto sandwich Ingredients 1 thick slice of good quality bread 1 egg 1 slice of Prosciutto 1 slice of Dubliner cheese or your choice of cheese A few leaves of fresh spinach Directions Cut a square out of the bread. Wash and chop the spinach. In a bowl beat the egg and add the spinach. On a low to medium hot pan put a drizzle of oil toast the bread on one side for about 1 minute. Add the egg mixture in the hole. Add the cheese and Prosciutto. Take the cutout piece and place it on top of the Prosciutto toasted side down. Turn heat down to low. Gently flip the sandwich and toast the other side.
