But I can hardly pay attention to what Michael is saying at this point because I am swooping my finger through the icing, letting the decadent sweetness melt on my tongue and marveling at the moist deliciousness of the cake. The cake is dense but light, the icing is thick and rich, and I’m trying not to lose my ladylike composure to wolf it down. Kaufman shares how he started selling Swole Cakes at farmers markets, where children would eat the cupcakes thinking they were getting a treat, not knowing how healthy they are. He had customers buy them for their highly allergic kids, transforming birthdays and class parties from exclusionary events to celebrations. Now Kaufman has his cupcakes in retail stores in Southern California. He has plans to expand to metropolitan areas nationwide, while maintaining an authentic connection to community. Kaufman believes in being genuine, living with authenticity, courage and vulnerability transfering this to his business principles. Through all of these endeavors Kaufman is also a college student. He is taking classes to better himself while creating a healthy and delicious snack alternative to better the community at large. When I ask if he has gotten sick of them, he admits to eating one every day, sometimes even two or three! I can’t say that I blame him, I am picking crumbs off the wrapper to make sure I get every last morsel. There are times when I grab a protein bar when I am too busy to eat or need a little snack to hold me over until the next meal. Usually I eat them because that is the quickest and easiest option, not because they taste good. A Swole Cake is just as easy to grab as a protein bar, only infinitely more delicious.
